Use this as a base for stir fries, curries, stews, or anywhere else you would use hot rice.

  • 1 head cauliflower, cut into florettes
  • 4 tbs. butter
  • salt and pepper

Place the cauliflower in a large, microwave-safe bowl with some water, the salt and pepper. Cover with plastic wrap and microwave on high for 2-3 minutes. Carefully check the tenderness of thecauliflower — the bowl will be hot and the steam can burn. If it needs more time, keep microwaving it, checking every minute or so. When it’s almost done, drain the water and add the butter. Microwave it for another few seconds, then mash the florettes with a potato masher or large fork.

Optional: Add garlic and some whole milk or cream, then puree it all in a food processor. Serve as a side dish with steak, chicken, turkey, etc. in place of mashed potatoes.
