These have an intense chocolate flavor without a lot of sugar. The soft, smooth texture is heavenly.

A sure cure for a chocolate craving.

  • 1/2 cup melted coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 1-2 Tbs. raw honey
  • Extra cocoa powder for dusting

Mix the oil, cocoa powder and honey together. The honey will not integrate well into the oil, so you’ll have to keep mixing as you pour the liquid into an ice cube tray (the smaller the wells, the better).  I use a restaurant-style ketchup bottle, and shake it between squeezes. Cool the filled trays in the freezer, then pop out the truffles and toss them with the extra cocoa powder. Keep chilled in the fridge.
