While delicious with rosemary, you can use a different herb depending on what you plan to eat on or with the crackers.

These crackers are delicious plain, but a little goat cheese never hurts.

  • 1 3/4 cup almond flour
  • 1/2 tsp. sea salt
  • 2 Tbs. fresh rosemary, finely chopped
  • 1 Tbs. olive oil
  • 1 egg

Combine the almond flour, salt and rosemary in one bowl. Whisk together the egg and olive oil in another. Combine the two until thoroughly mixed.

Cut a piece of parchment paper about the size of your baking sheet. Put the dough in the center, then put another sheet of parchment on top. Roll out the dough until it is about 1/8″ thick. Remove the top piece of parchment paper.

Transfer the bottom paper with dough to a baking sheet. Cut into squares with a knife. Bake at 350 degrees for 12-15 minutes, or until they start to turn light golden brown.
