This is an easy side dish for the football crowd. Figure about one potato per person.

A little heat, a little sweet.

  • 2 sweet potatoes, peeled and julienned
  • 2 Tbs. extra virgin olive oil
  • 1-2 tsp. cayenne powder
  • 1 Tbs. cinnamon
  • Freshly ground black pepper

Preheat the oven to 350 degrees.

Toss everything in a large bowl. Depending on the size of your potatoes and your own preference, adjust the seasoning by adding more cayenne or cinnamon. Lay the fries in a single layer on a large cookie sheet and bake until they start to brown, mixing them up every five minutes so the outside fries don’t burn. At the end you can turn the broiler on low just to get a little crispness to the fries but be sure to watch them closely so they don’t burn.
