My grandmother told me she used to make this for my aunts and uncle when they were young. While it takes a while to cook, it’s so low-maintenance you can just walk away for most of it.

Don't stir the custard, and keep an eye on the water to make sure it simmers but doesn't boil.

  • 1 large egg
  • 1/2 cup whole milk or coconut milk
  • 1 tsp. vanilla
  • raw honey to taste (optional)

Whisk together all the ingredients until well-combined. Pour into two small ramekins and place into a pot of simmering (not boiling) water. Let simmer until the custard has cooked and doesn’t jiggle anymore when you shake the ramekin (about 30 minutes). Remove from the water with tongs and let cool for a few minutes. Top with fresh fruit or eat plain.
