Whether you’re feeling a little under the weather or are looking for a cool summer treat, these popsicles are bursting with flavor and nutrients. If you have popsicle trays, use them; otherwise just fill some ice cube trays or even serve this as a slushie.

Easy to make and a joy to eat.

  • 1-2 cups frozen fruit (berries are great; mango and kiwi are delicious, too)
  • Enough liquid to cover the frozen fruit in a blender. I used half water and half unsweetened cranberry juice, which adds a nice tart flavor
  • Lime juice to taste
Add everything to your blender and pulse on high. You might need to stir it or add more liquid in order to get it fully blended. Once it’s done, pour into glasses and serve immediately; or spoon into ice cube trays or a popsicle tray, freeze and enjoy.
