For basic ice cream, you just need coconut milk or heavy cream and an ice cream maker (I use a half-pint, hand-held model by Doniver). The flavors are only limited by your imagination and what you have in your kitchen. Here’s one of my favorites from this past weekend.
- 1 can coconut milk or heavy cream
- 1/2 tsp. vanilla
- 1 tsp. raw honey
- 1 Tbs. instant coffee (Trader Joes has a good one)
- 1 Tbs. unsweetened cocoa powder
- 1/4 cup crushed macadamia nuts
- 2-3 squares dark chocolate, chopped
Put all the ingredients into a container with a lid. Shake it up and chill for 15-30 minutes. Shake the mix up just before pouring into your ice cream maker. If using a half-pint ice cream maker, you’ll need to do three batches. Churn for a few minutes, until it’s become the consistency of ice cream.
