For basic ice cream, you just need coconut milk or heavy cream and an ice cream maker (I use a half-pint, hand-held model by Doniver). The flavors are only limited by your imagination and what you have in your kitchen. Here’s one of my favorites from this past weekend.

Coffee ice cream with crushed macadamia nuts and dark chocolate.

  • 1 can coconut milk or heavy cream
  • 1/2 tsp. vanilla
  • 1 tsp. raw honey
  • 1 Tbs. instant coffee (Trader Joes has a good one)
  • 1 Tbs. unsweetened cocoa powder
  • 1/4 cup crushed macadamia nuts
  • 2-3 squares dark chocolate, chopped

Put all the ingredients into a container with a lid. Shake it up and chill for 15-30 minutes.  Shake the mix up just before pouring into your ice cream maker. If using a half-pint ice cream maker, you’ll need to do three batches. Churn for a few minutes, until it’s become the consistency of ice cream.
